Observation (CORRECTED DURING INSPECTION): Cooked breaded chicken, bagged cut lettuce, and bagged shredded carrots in standing coolers noted at 8C-10C. Items were removed from temperature control at 4C or below for less than 2 hours and were moved to the walk-in cooler at the time of inspection. Operator to ensure small amounts of sauces, cut lettuce, and shredded cheese are displayed at a time. Items are to be held on ice and discarded after 2 hours.

Observation: Grease noted under cook line equipment. Debris and build-up noted underneath shelving units in premises and in hard-to-reach areas. Frost and food debris noted on walk-in freezer floors.
Corrective Action(s): Operator to ensure noted areas are cleaned and sanitized with a dilute bleach solution at 100ppm. Premises must be maintained in a sanitary condition to prevent the attraction of pests.
