Observation (CORRECTED DURING INSPECTION): 20L container of meat sauce labelled as being made yesterday was 10.4C internally. Reviewed cooling process, staff stated that they use an ice/cold water bath to cool soups/sauces before transferring to containers which are then put into the walk-in cooler.
Corrective Action(s): Any soup/sauce that is transferred to large containers such as the 20L pails *must* already be 4C or less before being put into the cooler due to the slow nature of heat transfer in large containers. To aide in cooling larger batched of foods quickly, foods can be transferred to bus pans where the food is 2" thick or less. Alternatively ice packs/wands can be used in the large containers to reduce the internal temperature to 4C or less before transferring to the walk in cooler.

General observations:
- Door casing needing repair that was noted in last inspection has been repaired
- Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
- Good food storage practices noted such as raw meats stored separate or below all other foods
- Food up off floor ≥6”, good stock rotation noted
- Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
- Quats sanitizer available at 200ppm
- High temperature dishwasher sanitizing at ≥71°C
- Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
- Equipment appeared to be in good working order
- General sanitation and maintenance is good
- No signs of pest infestation noted, professional pest control company in regularly
- Thermometers present at all temperature controlled units
- Temperature logs maintained and no issues with equipment have been noted
- Staff with FoodSafe (or equivalent) present.
- No concerns with staff hygiene or food handling noted during inspection. All staff observed wearing hair nets, clean attire.
