Observation:
- Observation #1: New sheet for temperature records posted at coolers but no temperatures recorded. All coolers and freezers must have their temperatures recorded every day. Ensure that all coolers/freezers have accurate thermometers inside. If coolers/freezers are not holding foods at the appropriate temperature (</= 4 degrees Celsius for coolers), foods are at risk of pathogen growth and subsequent foodborne illness. [Date to be corrected by: immediately]
- Observation #2: Operator purchased pH test strips, not chlorine. New chlorine test strips must be purchased as only ones are expired (April 2018). Chlorine concentration must be recorded daily at dishwasher to ensure that utensils are correctly sanitized
Corrective Action(s):
- Corrective Action #1: Begin recording temperatures for all coolers and freezers daily
- Corrective Action #2: Purchase new chlorine test strips. Begin recording chlorine concentration at dishwasher daily = run a complete cycle and place strip on washed and sanitized utensil/plate. Chlorine concentration must match the manufacturer's requirement as show on the dishwasher label
