A routine inspection was completed:
- Coolers storing perishable items were 4C or colder; freezers -19C or colder; hot holding units above 60C; and thermometers present.
- Coolers storing canned, non-perishable drinks, and jugs of water were 8C.
- High temperature dishwasher had rinse cycle temperature of 76.6C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; date coded; labelled; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. Operator monitoring for pests themselves, snap traps and glue boards present.
- Exhaust canopy and filters are clean. Professional cleaning due this month as per service sticker. Ensure to contact a company and schedule the cleaning and service.
- Valid, FoodSafe certified staff present.
- Damaged floor tiles have been replaced with new ones that are durable, smooth, sealed, and cleanable.
- The openings in the walls have been repaired so the wall is durable, sealed and cleanable.
- All cooking and food prep being done inside the premises as the operator was informed, by the Fire Dept., that it was not safe and/or meeting Fire rules to be using an electric, domestic smoker and a gas burner (to make soup) beside the outer walls of the building.
