Observation: Wall surfaces and wire rack shelving inside walk in cooler observed with mould build up.
Underside of shelving above food preparation surfaces observed with food splatter build up.
Shelving where plates and spices are stored observed with food spillage build up.
Dust build up observed on several ceiling return vents and adjacent ceiling tiles.
Corrective Action(s): Clean all surfaces as discussed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Quat dispenser connected to hot water. Test strips cannot accurately verify concentration until temperature drops to 75F
Glue board on UV trap observed to require changing.
Corrective Action(s): A mixing valve (To mix hot and cold water) is one possible solution. Discuss with installer. This outstanding violation was noted in my report on Nov 22, 2019.
Have pest control company install a new glue board in the UV fly trap.
