Permit to operate was posted.
Handsinks were adequately supplied with liquid soap, hot and cold running water, and paper towels.
Hands were being washed prior to food preparation at the time of inspection.
Four refrigeration units were at or below 4 degrees C.
One display cooler was above 4 degrees C however is used for storage of pop/bottled water.
Cooled rice was at or below 4 degrees C internal temperature in the cooler. Reminder: Cold potentially hazardous food must cool from 60 to 20 degrees C internal temperature within 2 hours and then to 4 degrees C within an additional four hours.
Freezer temperatures were satisfactory.
Hot-held food was at or above 60 degrees C.
Secondary cook step is used for the meat that is shaved from the cones prior to placing it into the hot-holding unit according to the Operator. Reminder: Check the cooked meat reaches at least 74 degrees C after the secondary cook step.
Two probe thermometers were available.
No signs of recent pest activity were present at the time of inspection.
Food was covered in storage areas. Raw meat was stored separately from food.
100 ppm chlorine sanitizer was available in the bucket and second compartment sink. Single service utensils were available.
Operator's husband had a FOODSAFE Level 1 certificate valid until September 25, 2021.
Operator had a FOODSAFE Level 1 certificate valid until August 1, 2023.
