Corrective Action(s): Operator to ensure noted area is finished with a smooth, non-porous, and easily washable surface to encourage cleaning and to prevent the entry of pests.

Observation: 1. Old rodent droppings noted behind cook line, underneath dry storage shelving, in area next to oven, and in laundry room. 2. Cooling racks for baked goods noted with moderate build-up of food debris.
Corrective Action(s): Operator to ensure noted areas are cleaned and sanitized with a dilute bleach solution at 100ppm. A dilute chlorine solution can be made using 1 tablespoon of 5.25% unscented bleach to 1 imperial gallon of water. Solution can be applied to a cleaned surface and allowed to air dry.
