Observation: Found grease build up in sanitizing sink of the 3 compartment sink, as well as food debris build up on dough mixer.
Corrective Action(s): Ensure all food equipment, sinks and dough mixers included, are kept in a sanitary manner.
Wash and sanitize 3 compartment sink and dough mixer to remove grease and food build up before using today.

Observation: 1. Found multiple containers to have grease and food debris still on them after being washed
2. Found multiple containers stacked on drying rack before dry
Corrective Action(s): 1. Must ensure all equipment (inserts and lids) are washed and sanitized to remove all food debris and grease. Wash with soap and warm water, rinse with clean water, soak for 2 mins in sanitizer, then air dry.
2. Do not stack inserts inside one another while drying, stagger them so the water runs out. once dry then can stack.

2.Temperature records not being recorded.
Corrective Action(s): 1.Coolers must be able to maintain 4 C at all times especially during the busiest periods.
Have unit repaired so it can easily maintain 4 C at all times.
2. Must keep daily log of all cooler and freezer temperatures not just hot holding temperatures.
