Corrective Action(s): As discussed, the heat lamp was not keeping the pizza at 60 deg C or greater. Your current procedures limit the pizza to a maximum of 2 hours under this lamp before it needs to be discarded. There should be documentation for when the pizza is brought out each time, so staff know when the two hours expires.
