Observation (CORRECTED DURING INSPECTION): Vegetable cutter was found to have dried food debris from previous use.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized at the end of the night. Equipment with dried on food debris may require additional soaking. Vegetable cutter was soaked and cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Can of tomato sauce was stored in an opened container and covered with aluminum foil
Corrective Action(s): Once canned items are opened, contents must be transferred to a food grade container. Sauce was discarded by staff at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Back door was left open for air flow at the time of inspection.
Corrective Action(s): Ensure back door is kept closed to prevent potential pest entry. A screen door must be installed, if the back door is left open for air circulation. Back door was closed at the time of inspection.

Observation: Light fixture is missing the shatter shield in the kitchen.
Corrective Action(s): Replace light cover and ensure all light fixtures are equipped with shatter shields.

Comments

-Walk-in cooler was at 4C.
-Pizza cooler was at 2C (top) and 4C (bottom).
-Prep cooler across from oven was at 4C (top and bottom).
-Upright cooler was at 4C.
-Both chest freezers were less than -18C.
-Cooling wand available to cool hot potentially hazardous sauces. Sauces were probed at 4C.
-2-compartment sink was prepared with 200ppm bleach sanitizing solution.
-Sanitizer pail was at 200ppm and properly labelled.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff member observed practicing proper hand hygiene and good handwashing practices at the time of inspection.
-Foods stored off the ground and covered. Ensure all scoops are stored in a sanitary manner (a couple scoops found stored inside pail.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FoodSafe Level 1 valid until November 6 2022.
