Observation (CORRECTED DURING INSPECTION): 1. Whole cooked chicken noted at 57 C (lower section)

Observation: Hot holding unit (griddle) noted <40 C (ambient) on both shelves in lower section. No accurate thermometer present to verify ambient temperature.
Griddle lower section shelves noted at 70+ C directly.
"blanket" of warm air not being generated by unit to maintain 60 C or greater for the ambient temperature.

Regular temperature checks are being done with hot holding unit however the internal temperatures are decreasing for the lower shelf section.
Corrective Action(s): Ensure PHFs are maintained at or above 60 C and the hot holding unit is able to maintain this safe environment for the unit. Internal temperatures of the cooked chicken suggests the hot shelf alone is unable to maintain a safe holding temperature for the chicken.

Do not hot hold any PHFs in the lower section of unit until this section can be repaired or replaced.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: 1. Cold holding thermometer (large) in use for lower section of hot holding unit only on 1 of the 2 shelves - replaced hot holding thermometer noted last inspection on Feb 23, 2022.
Placed same large cold holding thermometer in cold holding unit next to a functioning thermometer - large thermometer unable to display an accurate reading.

2. Found 3 hot holding thermometers in deli and placed them all in upper hot holding section:
1. 50 C
2. 55 C
3. 61 C
Corrective Action(s): Ensure all thermometers are accurate and used for its intended purpose.
1. Cold holding thermometer (focus 0-4 C)
2. Hot holding thermometer ( focus around 60 C)
3. Oven thermometer (focus between 100-200 C)

Follow-up inspection to reports #ZDER-CBRTTB & #ZDER-CBZ2WW.

Sanitizer / Dishwasher:
-Sanitizer jug at 3 comp sink replaced and dispensing 200 ppm QUATS
-Sanitizer spray bottle labelled and noted at 200 ppm QUATS
-New high temperature dishwasher (brand: Moyer Debel) installed 3 days ago. Final rinse step at the dish: 76 C and 189 F at the gauge.

Hot Holding Unit (Griddle):
-Upper section (enclosed): noted with sliding doors left open by staff on purpose. Hot holding thermometer noted. Ambient thermometer noted above 60 C again once doors closed.
*internal temperatures of all foods in upper section was above 60 C with exception of breakfast bagel (meat, eggs & cheese) noted at 57 C over 2 hours ago.

-Lower section (open, grab and go section): 3 whole cooked chickens noted, large cold holding thermometer noted on hold hold lower shelf (***Violation noted above). Hot hold thermometer was relocated under cash register.
1. Whole chicken: 57 C (***violation noted above)
2. 2 other chickens above 60 C


***REPEAT VIOLATIONS noted for past 2 inspection Feb 15 & Feb 23 and in violation of the CORRECTION ORDER ISSUED Feb 15, 2022. A ticket will be issued as the CORRECTION ORDER was not complied with.
