304 - Premises not free of pests [s. 26(a)]
Observation: Observed old mice droppings on the floor and lower shelves of the back storage area. Rodent droppings carry diseases.
Corrective Action(s): Immediately clean up the droppings. Wash and sanitize all surfaces that came into contact with the droppings. Remove all items off lower shelves, clean the shelves and place the items back on the shelves.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Food debris found under shelving units and equipment in the walk-in-cooler, back storage area and in the kitchen. Food will attract and harbor pests.
2) Food stains found on walls in the kitchen. Food will attract and harbor pests.
Corrective Action(s): 1) Remove items off the floor and move equipment away from walls. Sweep and mop under shelving units and equipment to remove the food debris. Increase the frequency this is being done.
2) Wash the walls with hot water and soap/degreaser to remove the food stains. Rinse with clean hot water and sanitize. Increase the frequency this is being done.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): The wall mounted a/c unit in the kitchen has constantly dripping water from it. The water could fall onto food and/or it is a water source for pests to drink. A bucket was catching the water at time of the inspection. Manager indicated that a work order has been placed to repair it.
Corrective Action(s): Call a company to repair or replace the a/c unit, so it no longer constantly drips water, and operates as per manufacturer's specification.

Comments

A routine inspection was completed, the following observations were made:
- Coolers below 4C; freezers below -18C; hot holding units above 60C; thermometers present; and temperatures recorded daily in handheld device.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-comp sink for dishwashing had running hot and cold water, soap, and Quats sanitizer.
- Quats sanitizer in spray bottles were 200ppm strength.
- General sanitation is adequate. Improvement needed in hard to reach areas, and detailed cleaning to be completed.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rule being followed.
- Foods in hot holding units have maximum time storage between 2-4 hours, depending on the food item (raw/fresh items are 2 hours & frozen are 4 hours).
- FoodSafe certified staff present.
- Pest control company contracted to monitor for pests (2 times a month).
- Canadian Post Office was removed from retail section, minor repairs being completed to the floor. Space to be used for storage or Amazon boxes.
- A follow-up inspection to occur in 1 week to ensure cleaning of the mentioned areas is completed.
