Observation (CORRECTED DURING INSPECTION): Some flies observed on sticky trap in the back area.
Corrective Action(s): Ensure to keep foods covered and to consistently clean up any spills/food debris to prevent any pest attraction. Also ensure back door is always closed to prevent pest entry into your kitchen.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Low temperature dishwasher sanitizing line needed to be manually primed in order for the final rinse cycle to achieve 50 ppm chlorine residual.
Corrective Action(s): Manager will be calling dishwasher company for servicing. The dishwasher should automatically be able to apply enough sanitizer with each cycle to have a final chlorine residual of 50 ppm.

Comments

Routine inspection conducted:
-Handsinks in coffee area and in the sandwich prep area are equipped with liquid soap, paper towels, hot/cold running water
-Upright glass door cooler: 3.8 deg C
-Sandwich prep cooler in corner: 3.5 deg C
-Display sandwich cooler: air temperature was at 9 deg C but foods probed to be at <4 deg C. Doors had been opened/closed frequently during inspection.
**(Operator will be adding a section to the temperature logs to record the temperature of a food item in this cooler daily (and not just the cooler air temperature).
-All other coolers at 4 deg C or less
-All freezers at -18 deg C or less
-Hot held soup on the induction plate at 65 deg C
-3 Compartment sink used to wash/rinse dishes prior to being placed in the dishwasher
-Test strips available on site for staff to test dishwasher after each cycle
-Quat Spray sanitizer in back kitchen area was at 200 ppm Quats
-Manager and staff on site have valid FoodSafe certification
