Corrective Action(s): All foods are to be covered with tight fitting lids to prevent both physical and microbial contamination of the food.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: Several bakers pans of roast beef and cheese sandwiches, one pan of rolled roast beef slices, and cheese in bakers rack beside work station 13C; one 20 litre bowl of salmon salad sandwich filling on counter 9C.
Corrective Action(s): Food safety practices to be reviewed; leave bakers rack in the walk-in cooler to be filled with one bakers pan of sandwiches at a time. Only take out enough roast beef and cheese to prepare one rack of sandwiches at a time to minimize temperature abuse and reduce food safety risk.
Salmon salad filling should have filling should have all ingredients refrigerated before prep, 1/2 portions made at a time and filling cooled in shallow pans to improve food safety.

Observation: Mould on inside front wall of walk-in cooler and condenser drain pipe as well as the door frame.
Mould on door seals of below counter cooler located on cook line.

All refrigerators and freezers meet temperature requirements,both those in the main kitchen and the satellite kitchens; dishwasher sanitizing at 74C at the plate surface; no indications of insect or rodent infestation.
