- Dishwasher reaches 50 degrees Celsius, and 50ppm chlorine at plate surface
- Floor-wall junction in dishwashing area is clean, free of pooled water and food debris
- 100ppm chlorine solution available for surface sanitizing
- Cook line prep coolers, walk-in cooler, bar fridge all hold below 4 degrees Celsius
- Walk-in freezer holds below -18 degrees Celsius
- Pest proof, food grade containers used for food storage; all foods are covered and protected from contamination
