Observation (CORRECTED DURING INSPECTION): protein side (right side) sandwich cooler found to be maintaining contents at 6C internal (roast chicken and sliced orange cheese temperatures taken)
REPEAT OBSERVATION: undercounter 2 door cooler found to be maintaining contents at 11C (ambient)
REPEAT OBSERVATION: walk-in cooler found to be maintaining contents at 6C
Corrective Action(s): Correction order issued to repair the cooler units immediately. Operator was manually defrosting the walk-in cooler at the time of inspection. Temperature records checked, no issues noted in the previous 4+ days

Observation (CORRECTED DURING INSPECTION): Soup hot holding measured 45C internal. hot holding unit was set at a lower setting (approx #3)
Meatball hot holding in the same unit measured 60C but was reheated earlier.
Corrective Action(s): discarded the soup, hot holding unit was increased in temperature setting. ensure that all hot potentially hazardous food is held >60C at all times

Observation: 3 of 4 cooler units on site unable to properly maintain temperature. refer to violation 205 re: temperatures measured.
Corrective Action(s): Correction order issued to repair cooler units immediately. Ensure that measurement thermometers are calibrated and staff are aware of corrective actions to take should temperatures go beyond acceptable limits.
