Routine check of sushi premises.
Salmon - is frozen from supplier as required. Letter on file. Salmon stored frozen and defrosted in cooler.
Sushi rice is made frequently - vinegar is added as per recipe and food safety plan. Keep pH tests or make every few hours as discussed - ok.
Prep coolers, self serve display cooler, and sushi cooler (top of counter) are all at 4 C/40 F or colder - good. Sushi is made frequently as per operator.
Staff are wearing hairnets and uniforms.
Owner/operator and staff have taken a food safety course (verify name of course provider for equivalent to FoodSafe courses). Note 5 year expiry dates and renew before expiry.
Food Safety Plan available and records are being kept.
Hand washing sink in sushi prep area has hot/cold water, liquid soap, and paper towels in a dispenser - good.
Non-latex disposable gloves are available and discarded when contaminated.
Quats sanitizer in bucket is used for sanitizing wiping cloths (200ppm detected with test strip after being automatically dispensed from deli sink).
Wiping cloth is used to disinfect counters, cutting boards and food equipment.
Sanitation plan is available.
Commercial dishwasher in deli is used to clean and sanitize utensils and some items that are not cleaned in place.
Today, hot water sanitizing rinse was at 180F/82C on the final rinse gauge and 160 F measured inside of the machine - good.
General cleaning - good!
Pest control - reviewed. No obvious signs of pests.
