Observation: Prep cooler temperature at time of inspection was ~8 Celsius.
Correction: Operator placed the lid on the prep cooler at time of inspection to lower temperature. Ensure that the temperature in the cooler is restored to 4 Celsius or lower within one hour. If the temperature remains elevated, transfer foods to another unit and contact a repair technician to repair the unit.

Comments

A follow up inspection was conducted, the following observations were made:
Operator purchased clear plexi lid for the prep cooler
Lid was not on at the start of inspection and temperature measured at 8C
Lid was placed on and temperature drops from below 4C after 10 minutes
Ensure lid is always placed on as much as possible to maintain 4C for all foods in the prep cooler
All violations fixed, discussed results with the operator
