302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Staff are stacking racks in dishwasher as well as stacking the dishware in the racks.
Dishware is not air drying and there is no secure area out of the flow of traffic to facilitate this process.
Corrective Action(s): Dishwasher must not be loaded with more than one rack at a time.
Racks must not be over-filled - each scoop must be separate from all others to allow the free flow of water on each scoops entire surface area. Dishware that touches each other can not be effectively sanitized and must be redone.
A secure area that is out of the main traffic flow for the warehouse needs be provided for clean and sanitized dishware.

Observation: .
1) Dishwasher relocated to back warehouse several month ago, no approval received.
2) Cut fruit program being conducted at table in warehouse area, no approval received.
Corrective Action(s): .
1) Make sure that there is adequate space for racking dirty dishes and a secure area for storage of clean dishware to prevent both physical and biological contamination of sanitized dishware.
2) Cutting and packaging of fruit must be done in a permitted facility, until such time as the produce area can be upgraded to meet the requirements of the Food Premises Regulations all food processing/cutting must be done in the licensed deli.
NOTE:

Observation: Cut fruit program being operated out of the unlicensed produce department.
Corrective Action(s): Relocate this program to the licensed deli until such time as the produce area has been licensed and inspected to ensure compliance with the Food Premises Regulations.

Observation: Mouldy light in produce cooler; mouldy and water filled lights in dairy cooler; food debris, mould, dirt accumulations in both the produce cooler and the dairy cooler (including walls and around the condensers); drape for dairy cooler very dirty with mould/dirt/grease on all panels.
Corrective Action(s): Both departments need a general, thorough cleaning to remove mould, dirt, food waste, grease etc.

Observation: Several bulk food bins had significant food accumulations in them, specifically Bins 982, 547, 1133.

NOTE: customer was using hands to pick through figs in bin 539 - this bin needs to be removed, contents discarded, and the container cleaned and sanitized before refilling and replacing.

Waste water accumulation in pipe/plumbing area (catch-basin?) beside demo room.
Corrective Action(s): General cleaning of bulk bins needed.
Drain waste water from catch-basin to prevent mould growth and provide a breeding ground for insects.
