Observation: Noticed egg cartons being used to store or absorb greases from cooked bacon the line cooler.
Corrective Action(s): Never use empty egg cartons for storing any cooked food due to risk of food contamination.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Upright single door cooler in the coffee serving area at 15 degrees C.
Corrective Action(s): Discard any milk or sour cream and any other potentially hazardous food items from this cooler. Repair or adjust the cooler
so that it maintains all food items at 4 C or below at all times ( Immediately).

Comments

Routine inspection and follow up to the previously noted violations.
-Old refrigerator compressor has been removed and all floor wall junctions have been sealed.
- All cracks, gaps and crevices on the wall behind the dishwasher have been patched with silicone.
-No evidence of cockroaches seen at the time of inspection.
-No mice droppings seen in the kitchen except behind the pop machine.
-Major efforts have been made to clean up, de-clutter and organize the kitchen and storage and loading areas. Good.

The following items still require your attention:

1. Replace the old rotting piece of wood from underneath the pop dispenser. (May 10, 2018)
2. Recommended replacing the coffee and pop machine counters with stainless steel table with under-shelf. (May 10, 2018)
3. Remove any old mice droppings from behind the upright cooler in the bar area. (Immediately).
4.Clean the Fume hood, wall behind the cook line and floor underneath the cook line. ( By April 21, 2018)
5. If possible, remove the old flooring in the small dry storage room and install new washable and durable floor. (May 10, 2018)
6. Replace the flooring in the staff washroom dressing/locker area. Note: the flooring has been replaced in the washroom itself.
7. Remove grease build up from the floor and wall behind the hot water tanks. (By April 21, 2018).

Drinks cooler in the bar area below 4 degrees C.
Hot holding of soups > 60 degrees C.
Pastry and cake storage cooler below 4 degrees C.
Liquid soap and paper towels available at the hand sinks.
Dishwasher contained 100 ppm chlorine for sanitizing dishes.
The premises is monitored once a week for pests by a licensed pest control company.
