Observation (CORRECTED DURING INSPECTION): One large bus pan about 6 inches deep had cooked greek rice stored inside. Temperature was about 78C.
Corrective Action(s): Directed staff to portion the rice so that cooling happens faster.

Observation (CORRECTED DURING INSPECTION): Damp towel used to cover parsley in the walk-in cooler.
Corrective Action(s): Use damp paper towel to cover herbs instead, discard after use.

Observation: Few mice droppings found under dishpit area.
Corrective Action(s): Please remove droppings and continue to monitor for pest activity.

Observation: Bar coolers (inside) needs cleaning, as well as ice bin and storage area where liquor is stored. Flooring under dishpit needs cleaning. Exhaust hood has grease build up, no sticker indicating service date. Broken dishes noted underneath coffee station/cashier in hallway.
Corrective Action(s): Please do a deep clean in the noted areas by follow up inspection. Remind servicing company to place sticker on exhaust hood.

*Ice bin is leaking in the bar, staff mentioned that it is scheduled to be repaired tomorrow.
**Owner informed that the floor tiles shall be cleaned professionally and they are in the process of repainting the restaurant. Dining room flooring shall be replaced in the near future as well.
