Observation (CORRECTED DURING INSPECTION): Dishwasher was turned off at time of inspection. Operator turned on dishwaser and dishwasher was at 0ppm concentration during time of inspection.
Corrective Action(s): Dishwasher should be ON at all times. All dishes must be washed, rinsed, sanitized in dishwasher. Operator repaired dishwasher to reach 50ppm concentration.

Observation: Pest control is in place. No Pest Issues noted during time of inspection. Screen door needs to be replaced/repaired.
Corrective Action(s): Pest control company invoice to be provided to EHO. Ensure to repair/replace screen door within one week.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Open box of shortening ingredient was found during time of inspection. Any open boxes/containers must be food grade containers with proper fitting lids.
Corrective Action(s): All open food items must be transferred and stored in foodgrade containers with lids. This will prevent the food from contamination.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Mop bucket, janitorial items were placed in kitchen dishwashing area next to food preparation area. Mop bucket and mop must be stored separately away from food areas when not in use.
Corrective Action(s): Remove mop bucket and mop to another location away from the food areas (ie. washroom or storage facility). This should be done immediately.

Observation: Walkin cooler not equipped with thermometer.
Corrective Action(s): Ensure all coolers including walkin cooler are equipped with thermometers. Ensure to record daily temperatures.

handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
bleach water sanitizer available at 100ppm concentration.
Walkin cooler at 3c. Insert cooler at 4c and equipped thermometer.
Hot food (chana) found at 63c.
Pest control in place. Ensure to get a pest control contractor to do regular checkups.
Employees available with foodsafe certification onsite.

The following requires operators attention:
1. see above noted violations
2. Cleaning and sanitizing procedures should be documented. Implement a cleaning schedule for all hard to reach areas and under large equipment. This should be done on regular basis.
3. Ensure to make the sanitizer bucket every morning and as needed. Also keep all rags in the sanitizer bucket not on the counters.
4. Dispensers for handwashing stations need to be fixed. This is to be completed by July 11, 2017.
