Observation: Magnet knife holder observed to be in unsanitary condition. Grease and food debris build-up was noticed. Knives, even after being cleaned and stored, contamination will occur. Utensil holders/storage spaces must be maintained in sanitary conditions at all times. Observed knives with food debris on them as well.
Corrective Action(s): Required operator to remove all knives from the holder. Wash and sanitize them prior to use immediately. Magnet knife holder must be cleaned and sanitized before use.

Observation: Dishwasher not on at the time of inspection. When inquired, operator indicated that they turn on the dishwasher in the afternoon or evening after busy times. Operator did not have appropriate sanitizer available at the time of inspection either. Operator was instructed to create one immediately.
Corrective Action(s): Required operator to prepare sanitizer to be used immediately. Until dishwasher can be confirmed to be functioning properly, manual dishwashing must be performed at the three-compartment sink.
