Observation (CORRECTED DURING INSPECTION): Observation: Sanitizer bucket at front food prep area measured at 100ppm QUATS concentration.
Health rationale: Sanitizer for food contact surfaces at concentration less than 200ppm Quats are not strong enough to kill pathogens.
Corrective action: Immediately replace sanitizer solution in bucket to 200 ppm Quats solution. Ensure the sanitizer is changed frequently to maintain 200ppm Quats concentration. Measure sanitizer concentration as per manufacturer instructions. Test strips available (Expiring Feb 2022)

Observation: Observation: Wire shelving and hard to reach areas behind and (beside cooking units) observed to have accumulation of grease. Heavy grease build up in mop sink room.
Health rationale: Grease can potentially contaminate foods as well as attract potential pests.
Corrective action: Deep clean all hard to reach areas and wire shelving to remove grease guild up and ensure food premises maintained in sanitary manner. Ensure mop sink area is also maintained in sanitary condition.

Note: Floors have layer of grease and are quite slippery.

Temperatures:
-Walk in cooler at 4C
-Walk in freezer at -18C
-Stand up cooler x2 at 4C
-Prep/sandwich cooler at taco station at 4C
-Hot-holding units all adequate (all above 60C minimum):
-Chilli probed at 80C
-Rice probed at 75C
-Gravy probed at 72C

Sanitation:
-Food handlers practicing good hand hygiene and glove etiquette.
-Handsinks x2 adequate at food prep area (hot and cold running water, soap and paper towel)
-Adequate staff washroom - handsink supplied with hot and cold running water, soap and paper towel.
-Drink beverage dispenser in sanitary condition.
-All food is stored off the ground.
-3-compartment sink available for adequate cleaning and disinfecting.
-QUATS measured at >200ppm
-Personal belongings stored away from food prep areas.
-Ventilation baffles are in good sanitary condition

Pests:
-Pest control in place - Rent to Kill
-No signs of pests during time of inspection.
