- Metal sheets of evaporator coils of meat display coolers are degrading & falling apart.

Comments

Premises is a deli/grocery store. Meat processing done on site.

All handsinks are fully equipped.
All coolers at 4C or below.
All freezers at -9C to - 19C.
Bleach sanitizers available in spray bottles - measured at 200ppm. Ensure to mix 1/2 tsp of bleach to 1L of water to reach this concentration.
QUAT sanitizer from source measured at 200ppm.
Overall sanitation is satisfactory.
No signs of pest observed at the time of inspection.
Reviewed 3 step manual dishwashing method of washing, rinsing and sanitizing.
Ensure to sanitize meat processing equipment every 4 hours when in continuous use.

*Clean up the fan cover inside walk-in cooler.
