Observation (CORRECTED DURING INSPECTION): *REPEATED VIOLATION*
1. No sanitizer solution was present at the time of inspection to sanitize food prep tables/surfaces. 200pm bleach solution bucket was brought later.
2. High temp mechanical dishwasher was run multiple times but the max temperature on dish surface during rinse cycle was recorded at 50C. Operator called the technician and will be using 3 compartment dishwashing sink in the mean time. 200ppm bleach solution was prepared in 3rd sink at the time of inspection and steps for manual dishwashing discussed.
Corrective Action(s): Repair the dishwasher to ensure adequate washing and sanitation of dishes/utensils. The temperature at display gauge should be atleast 180F during rinse cycle.

Observation: *REPEATED VIOLATION*
Mouse droppings were found throughout the facility in the corners, along the walls and other hard to reach areas.
Corrective Action(s): - Contact your pest control company immediately to implement effective control measures.
- Remoce the mouse droppings and disinfect the areas with 1 part bleach to 9 part water solution.
- Regularly monitor for any new rodent activity.
- Clean the facility regularly and re-organize the storage areas to facilitate cleaning of hard to reach areas.

Observation: - Food debris was observed on the floor throughout the facility that could attract pest into the facility.
- Back doors were kept open that could be potential entry points for pest.
Corrective Action(s): Regularly clean the facility and keep the doors closed to prevent the pest issue.

Comments

Routine inspection conducted.

- Temperature of both walk in coolers noted at 2C
- Stainless steel freezers at or below -18C
- Front display cooler at 4C
- 3 compartment dishwashing sink present.
- Food stored in coolers were properly covered.
- Operating permit was present.

Please note that the pest issues have not improved and more rodent droppings were observed in the facility as compared to last routine inspection.

NOTE - A few equipment were stored outside (backside). Staff stated that the equipment are out of order and are NOT used for facility operation.
