Routine check:
** The small sink in the main cooking kitchen area can be used as a hand washing sink as it has hot and cold water. Provide liquid soap and paper towels in a dispenser at this sink (table top dispenser or basket is ok for paper towels).
Small bar cooler temperature is above 4 C. If used to store milk, ensure that it is below 4 C/40F. Provide thermometer. All other coolers are at 4C or colder.
No pooling of eggs for omelettes - Chef advises eggs for omelettes are cracked, scrambled and cooked to order.
Hot holding - hollandais is above 60 C/140F - good.
Jams (raspberry/berry) are made and kept refrigerated. Do not keep at room temperature unless they are tested and have a pH of 4.6 or less. Label keep refrigerated.
Dishwasher has a hot water sanitizing rinse (>71C measured inside of the machine).
