Observation: There's a small gap under the back door where pests can enter through.
Corrective Action(s): Replace the doorsweep to seal this gap. Using a brick to block the path is only a temporary measure.

Observation: Top shelf of rolling cart has breaks in it. Duct tape is being used to hold the pieces together.

GENERAL COMMENTS:
Back upright freezers are below -18 degC; Front undercounter freezer is at -14 degC, but all items inside are frozen.
Both prep coolers are below 4 degC; Both upright coolers in the front are below 4 degC
Hot holding unit in the front service area is at 61 degC.
Dishwasher rinse temperature was over 71 degC at plate level.
Discussed sauce storage at room temperature and washing of in use utensils. No concerns noted.
Hand sink's fully equipped.
Manager on duty has FS Level 1 certification.
200ppm Quats sanitizer is available for use. Timers are used to ensure solution's refreshed every 2 hours.
Temperature log is being maintained on the computer. LABEL ALL COOLERS AS PER TEMPERATURE LOG
Rentokill pest control company is on a monthly contract. Service reports are on-site.
