-no foods observed in the open garage -Food safety Plans for Beijing Duck and Marinated Duck translated to mandarin and posted **still awaiting Cooling Chart submittal -by Thursday for next cooking batch -operator can resume selling these duck items -back screen door has been repaired -2-door undercounter at Dim Sum cooking line 4 deg C -service report indicates the fridge fluids needed refilling -new thermometer at food level in place -no mouse droppings observed in dry storage room NOTE: maintain all soft packaged foods (soft plastic, paper, nylon) in rodent proof containers as a precaution -operator to email me the next pest control report at the end of the month
