Observation: Dishes left out on counter overnight with residual cooked batter inside. CORRECTED DURING INSPECTION - Items washed and sanitized.

Observation: Facility requires deep cleaning in areas that are not cleaned nightly. Food residue found on surfaces including:
- lower walls
- Shelves
- floor (in corners and under stove unit especially)
- stainless steel cupboards

Rodent droppings found on cardboard near dishwashing area.

MORE CLEANING REQUIRED! - Mopping of floor, cleaning of shelves in back are and cleaning of all surfaces of sugar containers and other dry storage containers required.
Thorough clean required by reinspection of Health Department. Focus on shelves and back storage area specifically. MOPPING NEEDED IN BACK STORAGE AREA.

Corrective Action(s): Discard cardboard.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Wash and sanitize the buckets and tubs found in this area. All items are to be run through dishwasher.
Inspect facility for points of entry for pests. Seal any holes.
