Observation (CORRECTED DURING INSPECTION): 3 bags of powdered cheese stored inside the dry storage area were chewed through by rodents. These bags were in proximity to the majority of the rodent droppings identified inside the dry storage. One large bag of flour, although unopened, had numerous rodent droppings on it.
Corrective Action(s): Aforementioned items were all discarded at time of inspection. Store dry products inside food storage bins with tight-fitted lids. This will not only help you control the strong smell of powdered cheese, but will also limit rodent access / subsequent contamination of your products.

Observation (CORRECTED DURING INSPECTION): Toppings and chicken inside prep cooler were left uncovered.
Corrective Action(s): Ensure that all toppings and chicken are covered when not in use.

304 - Premises not free of pests [s. 26(a)]
Observation: 1. Large number of drain flies / fruit flies observed in the dishpit area, compost bin area, the hallway leading to the staff restroom, and the restroom itself.
2. Significant number of mouse droppings observed along bottom shelf and center shelving units in the dry storage room. Majority of droppings were localized to area containing cheese bags.
Corrective Action(s): 1. Frequently / peroidically empty compost and garbage bins in the area. To identify if a suspect drain is the source of flies, consider placing a cover / bag over it to detect for fly activity. Contact your professional pest control company for treatment options, which may include mechanically flushing the drains with enzymatic cleaner.
2. Remove all rodent droppings with a strong bleach solution (1 part bleach, 9 parts water). Keep the floor clear so that it is always accessible for routine cleaning. Contact your professional pest control company for assistance on sealing any emerging holes that may be present inside the dry storage room. Store all of your powdered items inside pest-proof containers (e.g. plastic cambro containers) with tight-fitted lids.

Observation: Areas that need additional cleaning to remove debris:

2) Edges along the wall of the dishpit area

Corrective Action(s): Thoroughly sweep / mop and remove the debris in the areas above. Ensure that your kitchen space is maintained in good sanitary condition by adhering to your sanitation plan.

Comments

Routine inspection conducted of the kitchen and bar areas of this establishment. The following observations were made:

1. Temperatures
- Walk-in cooler (front & back) at 3C
- Bar undercounter coolers at 2C
- Stand-up freezers and chest freezer maintained -18C or below
- Prep cooler (left / right sides) all maintained 4C or less. Lids were present on all of the toppings - excellent
- Temperature logs present and up-to-date

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in kitchen and restrooms (customer + employee)
- Low-temperature dishwasher dispenses approximately 100 ppm chlorine residual. Test strips were available for use
- Oasis 146 QUATERNARY ammonium compound sanitizer dispenser releases 200 ppm
- Spray bottle and sanitizing pails present in kitchen and bar areas at 200 ppm QUATS
- Ice machine is maintained in good sanitary condition, scoop is securely stored outside of the ice machine. Filters are maintained in sanitary condition
- Ventilation canopy is in acceptable sanitary condition
- Kitchen items including knives, spoons, ladles were in good sanitary condition. Clean cups stored on racks at the "expo" line, plates are stacked above

Recommendation: Consider replacing your racks as the plastic is starting to chafe

3. Storage
- Food bins present for sugar and flour
- Chemical storage kept separate from food products
- As NOTED on the violation above, ensure that you place all your products in secure containers with tight-fitted lids

4. Pests
- Professional pest control company conducts routine audits. Last audit conducted on August 15, 2019 revealed no signs of pest activity indoors but heavy rodent activity outdoors
- Back screen door was recently reinforced to prevent rodent entry through small gaps

5. Administrative
- General manager and chef on duty have FoodSafe 1 equivalent [Restaurants Canada; Expiry: 2022]
- Permit posted and up-to-date

BAR AREA:
- Hand wash sink adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Nozzles and trays generally well maintained and in good sanitary condition
- Iodine low-temperature glasswasher releases 12.5 ppm iodophor residual at the glass. As per previous inspection, iodine logs and test strips were available for testing
- Reminder: Keep ice for consumption separate from ice for cooling soda fountain lines
- Creamers and milk stored inside bar coolers
- 200 ppm QUATS spray bottle available in bar area

A follow-up inspection will be conducted to assess issues above regarding deficiencies to sanitation and pest activity.
