302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer used yesterday and cleaned after appear to have food debris and some grease under guard and blade. Repeat. Grease buildup around panini grill. Bleach sanitizer in bucket in kitchen was measured at 0ppm.
Corrective Action(s): Meat slicer unit must be taken apart everytime it is being cleaned so that all food debris is properly removed. Clean panini grill. 100ppm bleach sanitizer is required to have effect. 1 tsp bleach to 1 litre as demonstrated. Obtain test strips to verify.

Observation: Ice bin containing ice is exposed to adjacent handsink where dirty water could potentially splash on to ice. Frozen patties stored in chest freezer downstairs is on tray only, no cover.
Corrective Action(s): Cover obtained. Ensure ice is covered as ice is considered as food. Cover/wrap food so that food is protected (i.e. patties).

Observation: Fruit flies noted throughout the kitchen, notably around dishpit and main food prep area.
Corrective Action(s): Increase the sanitation around kitchen floors, shelving units and walls as per comment on code 306. May need to replace cracked floor tiles and service floor drain to resolve fruit flies issue.

Observation: Food debris splash around panini station and between fryer and stove (grease buildup). Oil droplets noted on edge of exhaust hood. Food spill in cooler downstairs storing eggs and carrots.
Corrective Action(s): Remove food debris and grease build up. Deep clean all surfaces as directed.

Observation: Chest freezer storing frozen fries downstairs is duct taped and unable to be closed properly. Food measured between -10 and -12C.
Corrective Action(s): Please replace noted freezer by next routine. Frozen food should be stored at -18C.
