Observation (CORRECTED DURING INSPECTION): Garbage trolley was found in the back prep area close to the breading station. No food preparation at time of inspection.
Corrective Action(s): Do not store garbage trolley in the back area. Operator will lock trolley in the patio area.

Observation:
*Drying rack in the ware washing area was greasy and some debris build up.
*Floor drains have debris build up.
*Underneath plastic crates below front service counter have debris build up.
*Boxes of condiments underneath the prep table were getting dirty from food debris.
Corrective Action(s):
*Rack nees to be washed and sanitized. This must be done on a regular basis.
*Clean floor drains thoroughly.
*Clean underneath thoroughly.
*Remove boxes and store condiments in clean plastic containers with lids.

-limited seating (for physical distancing)
-health checks for staff when they come to work
-beverage self-serve (sign posted and hand sanitizer available)
-COVID safety plan available on site

Inspection:
*All hand wash stations supplied with hot/cold running water, liquid soap in dispensers and paper towels.
*Sanitizer (quats) available at 200 ppm
Hydrogen peroxide used for dining area
*Staff hygiene - clean uniforms, hair nets and masks worn by staff
*Temperature checks:
Walk in freezer was at -18 deg C.
Walk in cooler at or below 4 deg C.
Prep/line coolers at or below 4 deg C.
Hot holding was above 60 deg C (beans, chicken, etc.)
*Temperature log (digital) available and up to date.
*General sanitation was satisfactory but there are areas that require attention.
*Pest control monitoring in place. Check fly lists with pest control.
