Observation (CORRECTED DURING INSPECTION): Sandwiches, potato salad, pasta salad, chocolate milk, cut fruit/vegetables, yogurt and creamers were measured at 6-8C inside the Bar area sandwich display cooler.

Observation: Paper cup/soup bowl was found inside the flour bin. It appeared to be used as a scoop.
Corrective Action(s): Discard the soup bowl and use a scoop with a handle to prevent contamination of the flour.

Observation: 1) Two dead flies were found on cutting board in the servery area. some flies were seen in the kitchen area as well.
2) Rat droppings were found under the centre food prep area and in the dry storage.
3) Insect egg sacks were found in area next to 3-comp sink.
Corrective Action(s): Clean up rat droppings by soaking droppings in 1 in 10 bleach solution for 5 minutes then wipe with paper towels and discard in plastic bag. Clean and sanitize all equipment affected by pest activity. Contact pest control company to further deal with pest issue.

Observation: Ceiling tile was found missing near 3-comp sink. Pest record showed roof rat activity. Missing ceiling tile might be a factor.

Observation (CORRECTED DURING INSPECTION): Standup sandwich display cooler in the Bar/coffee area was measured at 6.5C.

Comments:
Main Kitchen:
-Walk-in cooler: 4C
-Walk-in freezer: -18C.
-Prep cooler: 0.7C.
-U/C cooler: Left side: 6C. Right side: 3.5C. Foods stored inside were only kept for the lunch period.(within 2 hours) and then stored back in the walk-in cooler.
-Hot-holding units were above 60C.
-Temperature logs were available and kept daily.
-Sanitizer buckets and spray bottles had 200ppm QUATS.
-Sanitizer dispenser had 200ppm QUATS.
-High-temperature dishwasher measured at final rinse cycle at plate's level was 74.4C.
-Test strips and sanitation logs were available.
-All equipment were clean and stored in sanitary condition.
-Dry storage was adequate. No dented cans.
-All foods were stored off the floor, in food-grade containers with lids.
-Raw meats and eggs were stored below all cooked & ready-to-eat foods.
-Chemicals were stored in janitorial room away from food.
-Food Safe Level 1 available and up-to-date for manager and staff.
-Pest control service is done once a week, records available.

Bar/coffee area:
-U/C cooler 3C.
-Beverage cooler was within 7C but no potentially hazardous foods were stored in it.
-Thermometer was available in all cold-holding units in this area.
-Coffee machine parts were clean.
-Sanitizer spray bottle at 200ppm QUATS.

Servery
-This area was not in use. It will be open in September.
-U/C sandwich cooler: 4C.
-Paninni press was clean and in sanitary condition.

General
-Handsinks were available in each area and supplied with hot & cold running water, liquid handsoap and single-use paper towels.
-Hair restraint and gloves were work by food handler.
-Washroom was clean and equipped with proper handsink.

Recommendations:
-Ensure the knobs for opening sink plugs are fixed even if the sink is not used for dishwashing.
-When maintaining temperature logs, it is better to probe the food item to measure the internal temperature instead of reading the thermometer in the cooler.
