Observation (CORRECTED DURING INSPECTION): One container of Bush Brand Orange Red food colouring observed on dry storage shelf on site during inspection. Staff removed the container of food coloring from the shelf to be discarded or returned to the supplier.
Corrective Action(s): Do not purchase Bush Brand Orange Red food colouring. Bush Brand Orange Red food colouring is not approved for human consumption as it contains a non-permitted ingredient (INS 122). Ensure to purchase food colourings which are from an approved source and which contain Canadian permitted ingredients.

Observation (CORRECTED DURING INSPECTION): Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration with test strip. Staff contact repair company during inspection. A functioning low-temperature dishwasher is available in the banquet hall, along with two 2-compartment sinks (one in the restaurant and one in the banquet hall).
Corrective Action(s): Clean and sanitize all dishes using the functioning low-temperature chemical dishwasher in the banquet hall and/or the 2-compartment sinks until the dishwasher in the kitchen has been verified functioning by the health inspector. Ensure the sanitizer is measured at 50-100 ppm chlorine concentration at the plate surface from the functioning dishwasher. Use available chlorine test strips to verify sanitizer strength.

Observation (CORRECTED DURING INSPECTION): Hand washing station upon entrance in kitchen observed obstructed by water bottle and sanitizer on counter top. Staff moved the obstructions during inspection.
Corrective Action(s): Do not store any items in front of or in the hand washing basin. Ensure the hand washing stations are maintained unobstructed and adequately supplied with hot and cold running water, liquid soap and paper towel to promote proper, frequent handwashing by staff.

Observation: Few house flies and drain flies observed on site during inspection. Yellow sticky fly traps are observed in place in non-food preparation areas.
Corrective Action(s): Monitor drain and house fly populations. Change yellow sticky fly traps as necessary and keep all food covered at all times to prevent potential contaminatoin of food. Keep all windows and doors closed at all times to prevent pest entry/breeding/harbouring on site. Contact pest control company to assess and apply treatment if drain fly population increases.

Observation: General sanitation of premise requires improvement in the following areas:
- All floors in the kitchen
- All floors in hard to reach areas including but not limited to the dry storage space, behind and around all cooking equipment.
Corrective Action(s): Degrease, clean and sanitize the aforementioned areas to remove grease and/or food debris. Conduct regular cleaning to prevent food debris build-up and to maintain the premise in a sanitary condition.

Observation: Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration at the plate surface with test strip. Staff contacted repair company during inspection.
Corrective Action(s): Repair dishwasher to ensure it is able to dispense 50-100 ppm chlorine concentration at the plate surface to adequately sanitize all equipment, utensils and food contact surfaces. Do not use this dishwasher until it is verified functioning by the health inspector.
Use the low temperature dishwasher in the banquet hall and/or the two 2-compartment sinks for manual warewashing.

- No hot-holding observed on site during inspection
- Temperature logs are maintained
- Hand washing station (X1) is adequately supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in pail (X1) measured at 200 ppm chlorine concentration with test strips (Ensure to have AT LEAST 2 pails with wiping cloths available in the kitchen to sanitize surfaces every 2 hours)
- Equipment stored in a sanitary manner
- Chemicals are stored away from food
- Professional pest control company is contracted to complete monthly inspections
- FOODSAFE Level 1 trained staff available on site (EXP: Oct 18, 2024)
- Permit posted in a conspicuous location on site
