Observation (CORRECTED DURING INSPECTION): Designated mop sink was covered and was used as additional drying space for washed & sanitized inserts and lids.
Corrective Action(s): All utensils and equipment must be stored in a sanitary manner after they are washed and sanitized. Mop sink cannot be used as a drying space. Additional drying racks are to be installed if there is insufficient dry space.

Observation (CORRECTED DURING INSPECTION): Hand soap pump was stuck and not dispensing any soap.
Corrective Action(s): Ensure a functional soap dispenser is available at the designated hand washing stations.

Comments

Routine inspection conducted and the following were noted.
All cooler units at 4C.
Temperatures for coolers and freezers monitored and recorded daily. As a more accurate method, an accurate thermometer should be placed inside the cooler units as opposed to relying on the cooler thermostat.
Internal temperature of donair meats were above 60C.
Reviewed cooking procedure of doniar meats with staff. Staff members were following the required secondary cooked step of the donair meats with the electrical grill unit.
No pest noted.
General sanitation was good.
100ppm chlorine solution placed in spray bottle.
3 compartment sink satisfactory.
Splash guard for the mop sink has been installed
