Comments

Routine inspection conducted of catering group operating out of a commercial kitchen. Minimal food on-site at time of inspection. Premise generally maintained in excellent sanitary condition. The following was noted:

Walk-in cooler at 4C
Stand-up glass-door freezers at -15C
Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
Bleach spray sanitizer present at 200 ppm chlorine residual. This solution is replenished when food service commences again. Facility has been advised to increase the frequency of cleaning and sanitizing of high-touch surfaces in the church, such as doorknobs and bathroom surfaces
High-temperature dishwasher sanitizes at a final rinse temperature of 73C at the plate (Minimum: 71C / 180F at the final rinse manifold)
Food service equipment is well organized and stored inside labelled drawers, and were in excellent sanitary condition. Ventilation canopy is well maintained
Dry storage area well organized and placed inside labelled containers. Food products are elevated at least 6" off the floor
No signs of recent, visible pest activity noted at time of inspection
Permit is posted and up-to-date

Information was provided at time of inspection pertaining to COVID-19. Reception was informed to currently limit gatherings to 50 people or less (including staff members), and to space tables at least 2 metres (6 feet) apart when they are arranged.
