Observation: White fridge closest to cook line is not working.
Items such as fresh ground beef is 8.9C internal temperature. Ambient fridge temperature is 11.0C.
Correction: Use up all items in this cooler within 2hrs during the lunch rush.
Move all items (that are stored under 2hrs) to working cooler.
Do not store any other meat in this fridge until it is fixed or replaced.
Only place uncut vegetables in fridge overnight and during the day.

Observation: Dishwasher is tested 2x at 68C final rinse cycle.
Correction: Use dishwasher to wash dishes only and sanitize in sink with bleach and water.
3 compartment sink available.
Fix dishwasher to ensure final rinse is 71C.

Hand wash sink hot water has been turned on. Supplied with hot and cold running water, liquid soap and paper towel in dispenser. Thank you.
Items in cooler next to grill (white fridge) - sausages are 4C or lower.
Operator has plans to get newer fridge to replace this one.
Please continue to monitor with thermometers.
Dishwasher takes time to turn on in the AM (1hr). Owner is aware.
Dishwasher final rinse max temperature tested with 2 thermometers (front and back), >71C, meeting requirements (71.1C, 70.5C). Thank you.
