Observation (CORRECTED DURING INSPECTION): Quat sanitizer in wiping cloth bucket was less than 200 PPM.
Corrective Action(s): Wiping cloth bucket was emptied and refilled. It measured 200 ppm quat residual. Ensure that this concentration is maintained at all times.

Walk in freezer was -18 degrees C. or colder.
Liquid soap and paper towel at handsinks.
Low temperature dishwasher had a 100 PPM chlorine residual at the plate surface at final rinse.
Hot holding of chilli and gravy was well above 60 degrees C.
General sanitation was overall satisfactory. Minor cleaning around preparation sink.
Ensure staff belongings are not hung on dry storage rack.
Temperature logs are being maintained.
