103 - Failure to hold a valid permit while operating a food service establishment [s. 8(1)]
Observation:
Health permit decal is expired and the food premises is operating illegally. Hand delivered outstanding permit fees letter to the owner.
Corrective Action(s):
Immediately pay the permit fees, in the amount of $150, within 10 working days. Failure to do so will result in the closure of the premises until they are paid.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
1) Found used rice bags and duct tape covering shelves in the kitchen. These materials are not food safe, durable, sealed or cleanable. This will make it difficult to wash these materials and it will attract pests.
2) Found some equipment still covered with the protective plastic when purchased. This plastic is not cleanable.
Corrective Action(s):
1) Immediately stop using these materials and install food grade materials (stainless steel, painted wood, hard plastic) that are durable, smooth, sealed and cleanable.
**Correction date: Jan. 1/22**
2) Immediately peel off the plastic, protective layer on the equipment so it exposes the cleanable surfaces.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -22C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 75.3C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth buckets had [Cl2] between 100-200ppm.
- All foods stored in food grade containers; covered; stored 6" off the floor; and in groups with raw proteins stored below RTE foods.
- No expired foods in use or for sale.
- General sanitation level is good. Exhaust canopy was professionally cleaned in August 2021 and next cleaning due in February 2022.
- Minor accumulation of food debris under the ice machine. Sweep and mop under the ice machine daily to remove food debris.
- No signs of pests.
- FoodSafe certified staff present.
- COIVD-19 measures in place, such as: staff wear masks; vaccine passports and gov't ID checked for dine-in customers; barriers between tables and at POS installed; and hand sanitizer available to staff and customers.
- Discussed inspection results with the owner, no signature obtained due to the pandemic.
