Observation (CORRECTED DURING INSPECTION): - Baking tray noted on top of handsink basin in kitchen.
Corrective Action(s): - Staff directed to remove baking tray. Handsink must be accessible/available for handwashing at all times. Do not store items on top of or in handsink.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Peel holder of juice press (front counter) observed to have buildup of fruit debris. Cleaning required. This component of the machine appears to be composed of a ribbed plastic.)
Comments

- Cleaning detailed in routine inspection report has been completed. Ensure premises is maintained at this level of sanitation.
- Food stored in the walk-in cooler was suitably covered to protect it from contamination.
- Areas where mouse droppings were noted have been cleaned to remove droppings. Pest Control Technician (Westside Pest Control) was on-site. Report was viewed at the time of the inspection Snap traps and multi-catch stations have been placed. Operator to maintain contract for monthly pest control services. Continue to monitor for any further activity cleaning up droppings immediately and disinfecting areas.
- Bleach sanitizer solution (200ppm chlorine) present in bucket to store and use with wiping cloth
- Cooked chicken noted to be stored in insert directly in prep cooler. Staff on duty reported they are now preparing a smaller amount at a time so there is adequate space in the prep cooler.
- Coving under warewashing sink has been re-affixed

Pending issue: The three ceiling tiles which are peeling still need to be replaced. As an interim measure duct tape has been used to hold them together which is not suitable as a long term measure. Staff reported new tiles have been ordered and will be put in place when they arrive. This will be verified at the next inspection.

* Operator present at the time of the inspection and holds a valid Foodsafe level 1 certificate (valid until Feb 2021). Additional staff will need to complete Foodsafe level 1 to ensure adequate coverage and ongoing compliance with Foodsafe requirements - the Operator must have Foodsafe level 1 and in the Operator's absence at least one staff must have Foodsafe level 1.
