Observation:
1) Accumulation of food debris and crumbs on the floor, along the base of walls and around legs/wheels of equipment, tables, & racks. This will attract pests.
2) Dust and cobwebs accumulated on the upper walls and ceiling of the dry storage room. The dust could fall into food and contaminate it.
Corrective Action(s):
1) Sweep and mop the mentioned areas to remove the food debris and crumbs. Detailed cleaning of the mentioned areas is needed on a regular basis. Train staff to move items away from walls, OR the broom and mops reach all the way to the back walls when cleaning.

2) Clean the upper walls and ceiling to remove the dust and cobwebs. Cleaning of these areas shall be done on a regular basis to prevent accumulation.

Comments

A routine inspection was completed:
- Coolers 4C of colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Low temperature dishwasher had a rinse cycle [Cl2] between 50-100ppm.
- Quats sanitizer in cloth buckets and spray bottles and strength of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level is good, improvement needed in the mentioned areas.
- Exhaust canopy and filters have been professionally cleaned and serviced in September 2023. Next service due in March 2024, as per service sticker.
- No signs of pests.
