Observation: Some mice droppings found in the storage area attached to the kitchen. The pest control activities are being undertaken by kitchen management. Several glue traps were seen at the time of inspection.Weather stripping adequate underneath all loading areas doors.
Corrective Action(s): 1. Clean floors and floor wall junctions undernealth all storage shelves.
2. Use hot water and bleach to clean floor underneath all shelves
3. Remove all Tom Cat bait stations from food storage areas ( corrected during the inspection).
4. Place more snap traps and glue traps against the wall underneath the shelves along all walls.
5. Keep monitoring the areas underneath the shelves for any signs of rodent activity (droppings).

Comments

*Fly issue has been resolved. All surfaces in the bakery kitchen have been thoroughly cleaned and sanitized. Good.
* UV fly trap has been installed. Good.
* All other required corrective actions have been completed.

Recommendations:
1. Seal all holes/gaps in the walls in the washroom and storage with steel wool to prevent mice harborage
2. Ensure to lift the bottom racks on all shelves to at least 6 inches off the floor. Absolutely nothing to be stored under the bottom shelves
to allow for easy monitoring and placing rodent traps.
3. Clean the sugar spills in the back pallet storage area.
4. Clean and organize the office room.
5. Move all pallets and clean floor underneath to remove any food debris.
6. Clean the tube light protective sleeves and security camera in the small bakery prep room.
7. Deep cleaning required of the shelves and floor in the porch kitchen especially in floor wall corners
8.The loading area and other doors must be kept closed when not in use.
