Observation (CORRECTED DURING INSPECTION): Knives still being kept in gap between countertops and equipment. Spaces in between counters and equipment cannot be properly washed and sanitized.
Corrective Action(s): Wash and sanitize knives. Only store knives in proper knife holders/racks or trays.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishwasher's sanitizer bucket was empty at time of inspection. Staff replaced with a new bucket, but no sanitizer was being dispensed (see code 308).
Corrective Action(s): Rewash and sanitize all dishes. Repair technician fixed dishwasher during inspection (see cod 308).
**Ensure to check level of sanitizer in bucket frequently and replace with new bucket when near empty.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): One handwashing sink (by the dishwasher) was not equipped with liquid soap. Soap dispenser was broken and empty.
Corrective Action(s): Ensure all hand sinks are always stocked with liquid soap and paper towel. Place a separate bottle/pump dispenser of liquid soap at the above mentioned handwashing station.

Observation (CORRECTED DURING INSPECTION): 1) Scoops stored in bins with dry ingredients.
2) Rice scoops stored in water at room temperature.
Corrective Action(s): 1) Store scoops separately from dry ingredients to prevent contamination of food.
2) Store rice scoops in dry containers and wash and sanitize every 2 hours.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Dishwasher was not dispensing sanitizer after empty bucket was replaced with new bucket. Staff ran dishwasher several times, but sanitizer was not being pulled into the tube.
Corrective Action(s): Staff called for service of dishwasher at time of inspection. Dishwasher was repaired during inspection; 100ppm chlorine detected at end of rinse cycle.

- Sushi bar cooler was measured to be 3C at top display; ~1C under counter
- Walk-in cooler measured to be 4C
- Prep coolers within kitchen were measured to be 1-3C
- All freezer temperatures were adequate
- Hot holding was above 60C
- Chlorine sanitizer solution available at 100ppm in spray bottles in kitchen and at sushi bar
- All other handwashing stations equipped with liquid soap and paper towels
- General sanitation okay. Ventilation hoods to be cleaned soon; slight grease build-up.
- Ice machine was clean and free of biofilm.
