Observation (CORRECTED DURING INSPECTION): Marinated raw chicken stored dierectly on top of romaine lettuce in the upright cooler.
Corrective Action: Organize cooler so that RTE foods are stored above raw meats to prevent contamination . Move raw chicken to different cooler

Observation: Accumulation of grease buildup on the wall, flour directly under deep fryer and on the side of the equipment.
Corrective Action: Ensure the deep fryer area is cleaned and conduct cleaning more regularly to prevent potential pest issues.

- Hand washing station supplied with liquid soap, paper towels, and hot/cold running water
- All coolers at 4C or below
- All freezers at -18C or below
- All hot holding above 60C
- pH of sush irice measured at 4.0
- Bleach sanitizer available in sanitizer bucket and spray bottles at 200ppm
- High temperature dishwasher measured at 73.3C at plate level after final rinse cycle
- Exhaust canopy is due for service
- No signs of pest infestation at time of inspection
- Valid FoodSafe Level 1 certified staff onsite
- General sanitation is okay. Continue with cleaning under equipment and around perimeters as well as mentioned above for deep fryer area
