Observation (CORRECTED DURING INSPECTION): Two rolls of California rolls and approximately eight prawn tempuras were being stored out at room temperature. Temperature of rolls was 21 degC and tempura was at 26 degC.
Corrective Action(s): The rolls and tempura were discarded. As discussed, do not store potentially hazardous foods (PHF's) in the danger zone (between 4-60 degC) after lunch rush.

Observation: Cooler and hot holding temperatures are not being maintained.
Corrective Action(s): Start recording your cooler and hot holding temperatures daily. Ensure that thermometers are provided in every cooler and that you have a probe thermometer to monitor the soup temperatures.

Observation: Mice droppings noted beside grease trap in the kiosk. Several mice droppings noted in the storage room on the second floor.
Corrective Action(s): Clean the areas as discussed. The mall has a pest control technician that services the business regularly. Snap traps noted in the kiosk.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some general cleaning required. There's grease build up in the toaster ovens. The caulking along the 3-compartment sink needs to be replaced.
Corrective Action(s): Wash and scrub the trays/racks in the toaster oven. Clean the grease buildup in both toaster ovens. Replace the caulking along the 3-compartment sink.

Observation: The hand washing sink has a small drip even after it's shut off. Operator had turned off the hot water at the sink overnight but had not turned it back on the next morning.
Corrective Action(s): There must always be hot/cold water available at the hand sink at all times. Get the drip fixed.

Beverage cooler's at 8 degC (this cooler only has prepackaged, non-phf's stored in it).
Miso soup's at 74 degC.
100ppm bleach is available for sanitizing.
Discussed dishwashing procedures. No concerns noted.
Hand sink and 3-compartment sink is fully equipped.
