Observation (CORRECTED DURING INSPECTION): Bleach water santiizer was not found during inspection.
Corrective Action(s): Bleach water sanitizer was prepared by operator during time of inspection. Sanitizer at 100ppm concentration in sanitizer buckets. Rags are being stored in the buckets.

Note: Ensure to prepare sanitizer (bleach water) in the mornings before starting food preparation. Also, ensure to label sanitizer bucket.

Observation (CORRECTED DURING INSPECTION): The following observations were made:
1. Cardboard was found lining the food preparation areas.
2. Areas in kitchen found to be lined with aluminum foil paper.
This can lead to the contamination of food and the breeding of pathogens.

Corrective Action(s): Remove all materials for lining of food contact surfaces. All surfaces must be easy to clean material and routinely cleaned and sanitized.

Observation: Plastic buckets are being reused for storage of food items.
Corrective Action(s): Remove all unnecessary equipment/food containers as not needed for operation. This will also elminate clutter and allow easier cleaning throughout facility.

Comments

Routine inspection.
Handwashing station is equipped with hot/cold running water, liquid soap and paper towels.
Dishwasher reached 50ppm concentration for sanitizing cycle.
All coolers at 4c and equipped with thermometers.
note: IR gun thermometer is available for checking temperatures.
Freezers at -18c.
Note: There is a standup freezer that is not in operation and being stored in front area of restaurant. There is no food storage in this freezer.
Ice dispenser is in sanitary condition.
Dry storage area is in sanitary condition.
Foods are being stored off the floor.
Foods are being bought from approved sources.
No pest activity noted during time of inspection.

The following requires operators attention:
1. see above noted violation(s)
2. Ensure pest control is place to prevent the breeding or entry of any pests in case of activity. It is recommended that you obtain pest conrtol invoice from landlord as discussed during this inspection.
3. Do not preset front dining area with utensils and cutlery as this can lead to contamination.
4. In operator's absence, there must be at least one other person with food safe certification onsite. Please ensure employee(s) obtain foodsafe certification. You can check foodsafe course schedules on www.foodsafe.ca
