205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. Six packages of chopped salad/lettuce and seven bags of bean sprouts were found stored at ambient temperatures. Internal temperature of items were measured at 25 to 27 degrees C. Packaging states: "perishable/keep refrigerated"
2. Five containers of stirred yogurt stored in the walk in cooler at an ambient temperature of 9 to 10 degrees C. Internal temperature of yogurt was measured at 8 degrees C.
Corrective Action(s): All items were discarded by staff at the time of inspection. Ensure that all potentially hazardous foods are stored at 4 degrees C or less to limit the growth of potential pathogens and/or the production of toxins.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towels available at two compartment sink.
Corrective Action(s): Paper towels supplied at time of inspection. Ensure that all sinks intended for hand washing are supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper hand washing.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Several cases of decaying apples are being stored in room with empty boxes and old equipment. Apples are dripping liquid which is pooling on the floor. Store room is not sealed and is accessible from outdoors during the day.
Corrective Action(s): Remove decaying fruit and any other potential pest attractants from the premises. Date to be corrected by: April 27, 2018.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk in cooler ambient temperature was measured at 9 to 10 degrees C. Compressor appears to be leaking (no food stored under area of leakage). Walk in cooler is used mostly for storage of whole fruits and vegetables, with the exception of some potentially hazardous food items (e.g. yogurt).
Corrective Action(s): Ensure that walk in cooler is repaired or adjusted to maintain temperatures of 4 degrees C or less if potentially hazardous food items are to be stored here. Date to be corrected by: April 30, 2018.

Observation: No thermometers accurate to 1 degree C observed within cold holding units.
Corrective Action(s): Ensure that all cold holding units are equipped with thermometers accurate to 1 degree C to allow for temperature checks. Date to be corrected by: April 30, 2018.

Comments

Routine inspection conducted:

- Coolers at 4 degrees C or less (with the exception of walk in cooler)
- Freezers at -18 degrees C or less
- Bleach available on site
- Audited sample of canned items appeared to be free of large dents or dents along the seal
- No evidence of pest activity observed at time of inspection

Notes:
1. Ensure that all items are stored off the floor to protect from potential contamination and facilitate proper cleaning.
2. A hose was observed to be attached at the two compartment sink. No backflow prevention was observed (e.g. vacuum breaker). Ensure that backflow prevention is in place if hose is to be attached to faucet at two compartment sink. Otherwise, this may potentially allow for potentially contaminated water to enter the water distribution system. Hose removed at time of inspection.
3. It was stated by staff that no samples of cut fruits/vegetables are being offered at this time. No utensils observed on site.

1. Maintenance of temperature records
2. Pest control
3. Cleaning and sanitizing of water dispenser system
