301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Knives were stored between a cutting table and a wall.
Corrective Action(s): Ensure knives are stored in a sanitary manner to prevent potential cross contamination of foods. The area between the wall and the table cannot be cleaned and sanitized on a regular basis.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Facility did not have any food grade sanitizer available for use at the time of inspection.
2) Cutting tables and saws are sanitized twice a day.
Corrective Action(s): 1) Food grade sanitizer must be available in each food preparation area to allow for sanitizing of food contact surfaces. Sanitizing solution of 272ppm to 700ppm DDBSA and 704ppm to 1875ppm lactic acid was prepared at the time of inspection.
2) Cutting tables and saws need to be sanitized after each use or within 2 to 4 hours if used throughout the day.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1) Front handwash station had shelving units moved in front to prevent access to the handwash stations.
2) Back handwash station did not have single use paper towels.
Corrective Action(s): 1) Front handwash station must be easily accessible for staff to allow for proper handwashing. Shelving units must be moved or additional handwash station must be installed. Facility has been issued a Public Health Act Correction Order regarding lack of access to the handwash station. Staff may use the back handwash station while addressing the issue related to the front handwash station.
2) Handwash stations must have hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwahsing. Single use paper towels were replaced at the time of inspection.

Observation: Facility has carried out renovations of the facility without health approval. Handwash station is no longer accessible to the meat cutting staff.
Corrective Action(s): Any physical changes must be approved by the Health Department prior to completing construction to ensure they comply with the Food Premises Regulation.

Observation: Sauce was stored in an opened metal can of food.
Corrective Action(s): Once metal cans of food are opened, the contents must be transferred to a food grade container with proper protection to prevent potential contamination of foods.

Comments

-Facility has completed construction of the facility without Health Approval. Facility has been issued a Public Health Act Correction Order. Failure to comply with the requirements of the Order is an offense.

-Walk-in freezer was at -20C.
-Walk-in cooler was at 4C.
-Bank coolers were at or below 4C.
-Chest freezers were below -18C.
-Upright freezer was at -12C.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Washroom supplied with hot and cold running water, liquid hand soap, and single use paper towels.
