Observation (CORRECTED DURING INSPECTION): Cooked chicken was cooled in large containers and placed in the walk-in cooler. Discontinue this practice since it will not cool to 4 C within 6 hours. Food should be cooled from 60 C to 20 C in 2 hours or less and from 20 C to 4 C in 4 hours or less.
